Using response surface methodology for optimizing the salmon cartilage (Salmon salar) hydrolysis process by alcalase - papain enzyme mixture

In this article, we present the results of optimization on salmon cartilage (Salmon salar) hydrolysis by a mixture of alcalase - papain enzyme. The our results show that the appropriate parameter range for salmon cartilage hydrolysis by alcalase - papain enzyme mixture: suitable enzyme concentration range is 0.1 – 0.5%, the suitable temperature range is 45 – 65oC and suitable time period is 3 - 6 hours. Optimization results have determined the optimal parameters for the salmon cartilage hydrolysis by the alcalase - papain enzyme mixture: enzyme concentration is 0.4%, hydrolysis temperature is 55oC and hydrolysis time is 4 hours. The results of salmon cartilage hydrolysis with the above parameters obtained hydrolyzate with CS collection efficiency of 98.52%.
